Spicy Carrot and Walnuts Salad Recipe

Ingredients
- 3-4 medium-sized carrots
- 1 garlic bulb
- 100g walnuts
- 2-3 scallion strings (spring onions)
- Bunch of parsley
- 2-3 tablespoons mayo
- 2 tablespoons yogurt or sour cream
- Pinch of salt
- Pinch of ground pepper
- Pinch of dried chili powder
Instructions
- Wash, peel, and grate the 3-4 medium-sized carrots using a box grater. Peel the garlic bulb and either mince it finely or grate it using the finest section of the box grater.
- Chop the 2-3 scallions strings (spring onions) and a bunch of parsley. Combine the grated carrots, minced/grated garlic, chopped scallions, and parsley in a large mixing bowl.
- Heat a dry pan and add the 100g of chopped walnuts, spreading them into a single layer. Toast the walnuts for 2-3 minutes, stirring occasionally to ensure even toasting. Remove the toasted walnuts from the pan and add them to the bowl with the other vegetables.
- Add 2-3 tablespoons of mayo to the bowl. Also, add 2 tablespoons of yogurt or sour cream for a creamy texture.
- Sprinkle a pinch of salt and pinch of ground pepper over the ingredients in the bowl. For a spicy kick, include a pinch of dried chili powder.
- Mix all the ingredients together thoroughly, ensuring an even distribution of the dressing.
- Let the spicy carrot and walnut salad sit for 10 minutes, allowing the flavors to mix.
