15 Minute Easy Courgette Fritters with Cheddar Ingredients Substitutions
What you will need for this super simple dish:
- Courgettes: These versatile veggies are certainly the star of this show and I wouldn’t recommend using other squash varieties because you’ll be complicating a simple recipe. Of course you can but I wouldn’t. You can use a spoon of flour or breadcrumbs if you’re worried that your fritters won’t retain their shape but if you drain them properly, this step isn’t necessary. Why courgettes are good for you
- Egg: Adding an egg to fritters helps to bind the ingredients together. It ensures the fritters hold their shape while cooking, giving them a perfect texture and making them easier to flip.
- Cheese: I love using a sharp, red cheddar in this recipe as it adds a tang to the mild flavour of the courgettes. Other great options include feta for a salty kick, mozzarella for a creamy texture, or Parmesan for a nutty, savoury twist. Each adds its own unique touch, making your fritters even more irresistible.
- Oil: Vegetable oil is crucial for frying the fritters to a golden-brown finish, giving them a delightful crunch.
Top Tips for 15 Minute Easy Courgette Fritters with Cheddar
- No peeling needed: No need to peel the courgettes. The thin skin is full of goodness, and the seeds are tender enough to leave in. Unlike other squashes, courgettes are delicate and ready as is.
- Stick to 3 key ingredients: You’ll only need courgettes, an egg, and red cheddar. Honestly, it is THAT simple. Be sure to throw in some dried herbs and perhaps some minced garlic for extra flair, but the main ingredients are few and simple.
- Frying essentials: Use any neutral vegetable oil for frying. It ensures a golden, crispy finish.
- Perfect tools: For the best results of courgette cheese fritters, use a well-seasoned skillet with a good surface. A wide, thin spatula is ideal for flipping the fritters without breaking them.
Make Ahead and Storage Instructions
Serve these courgette cheese fritters warm with sour cream or Greek yogurt for the best flavour. They taste amazing when freshly made but can lose their edge if left too long. Luckily, they’re quick and fuss-free to whip up anytime!
15 Minute Easy Courgette Fritters with Cheddar
These courgette cheese fritters are the perfect addition, and with just three ingredients, breakfast could not be easier. Easy, cheap and really yummy! The tri factor…
Ingredients
- 2 medium courgettes
- 1 small egg
- 100 gr sharp red cheddar, grated
- Pinch of salt and ground black pepper
- Vegetable oil for frying
- Optional: favourite dry herbs - dill, parsley, cilantro, Italian or French mix.
Instructions
- Grate raw and unpeeled courgettes on medium sized grater. Add salt and let it stay for 5 minutes. Then, gently squeeze excessive liquid out of courgettes. Try to make it as much dry as you could. Due to adding cheddar the fritters will still be moisture enough.
- Add 1 egg, grated red cheddar and dry herbs if using and mix it in.
- Heat oil in the skillet over the medium heat. With your hands, form small and thin courgette pancakes. Place it in the skillet and fry for 3 minutes on 1 side, flip and fry for 2 minutes on another. Serve warm with sour cream or yogurt.
