- 2 medium courgettes
- 1 small egg
- 100 gr sharp red cheddar, grated
- Pinch of salt and ground black pepper
- Vegetable oil for frying
- Optional: favourite dry herbs - dill, parsley, cilantro, Italian or French mix.
Instructions
- Grate raw and unpeeled courgettes on medium sized grater. Add salt and let it stay for 5 minutes. Then, gently squeeze excessive liquid out of courgettes. Try to make it as much dry as you could. Due to adding cheddar the fritters will still be moisture enough.
- Add 1 egg, grated red cheddar and dry herbs if using and mix it in.
- Heat oil in the skillet over the medium heat. With your hands, form small and thin courgette pancakes. Place it in the skillet and fry for 3 minutes on 1 side, flip and fry for 2 minutes on another. Serve warm with sour cream or yogurt.
