What is milk whey and why to use it for crepes batter?
When we are making homemade cottage cheese, we end up with this cool liquid called whey. This stuff might look clear and watery, but it’s packed with goodness!

Crepes on Milk Whey Batter
Crepes (Blinis) made on milk whey by this recipe turn out soft, delicate and fluffy, but very sturdy and elastic. They would be perfect for rolling any filling, or just serve them with jam. honey and sour cream.
Ingredients
- 1 lt milk whey, leftover from making homemade cottage cheese
- 450-500 gr flour
- 3 eggs
- 2 tsp sugar
- 1 tsp salt
- 1 tsp baking soda
- vegetable oil for frying
Instructions
- Prepare all ingredients beforehand. In a large bowl, slightly beat the eggs using the mixer or whisk.
- Add sugar and salt to milk whey, then heat the mixture in microwave oven until warm, but not hot. Heat in 15secs intervals and stir in between. Might take 1 - 1.5 mins depending on microwave power.
- To the bowl with eggs, add flour, baking soda and half of warm whey liquid. Use the mixer or whisk to combine all ingredients, making silky batter without any lumps. Then, add the second half of whey and mix all again.
- Leave the batter to rest for 10-15 minutes.
- Prepare the working station for blinis/crepes frying: frying pan, oil for frying, spatula for flipping the pancakes, brush for greasing the pan. Another plate for keeping the hot crepes and lid to cover it.
- Mine "frying station" usually look like this:
- Pre-heat the frying pan and grease it with oil using the brush. Fry the crepe for 15-20 secs on one side, flip and fry on another for 15 more secs. Keep the the medium-high temperature. When ready, place the crepe on the plate, fold into triangle, and keep covered with lid until ready to serve.
- Serve with favourite toppings - jams, chocolate spread, condensed milk, honey or sour cream. Or fill with meat, ham and cheese, egg salad or other savoury filling.
