Leftover Roast Beef Chilli

If got leftover beef then turn it into a mouthwatering delight with this quick and simple Leftover Roast Beef Chilli recipe. Ready in under 30 minutes and using just one pot, it transforms ordinary leftovers into a luxurious meal the whole family will love. No need for fancy cuts; any roast beef will do the trick, adding rich texture and a touch of luxury to your chili.
Ingredients
- Leftover beef - roast beef, brisket, any other stewed or long-cooked beef
- 1 onion (diced)
- 2 cloves garlic (minced)
- 1 can (400g) plum tomatoes
- 1 can (400g) red kidney beans (drained and rinsed)
- 1 teaspoon dried oregano
- 1 teaspoon cumin
- 1/2 teaspoon cayenne
- 1/2 teaspoon chipotle chilli flakes *
- 1/2 teaspoon red chilli flakes
- Salt and pepper to taste
- 2-3 tablespoons vegetable oil
For Serving
- Sour cream, Spring onions (chopped), Shredded cheddar, Red chillis (sliced), Lime wedges - All optional, decide for your taste how you would like to deal with hot bowl of chilli.
Instructions
- Heat an oil in a pot, add diced onion and cook until golden for 5 minutes, then add minced garlic for a minute.
- Add shredded leftover roast beef to the pot, let it brown with onions and garlic. Pour in crushed plum tomatoes and let it all simmer for couple of minutes.
- Add oregano, cumin, cayenne, chipotle chili flakes, and red chili flakes. Season with salt and pepper.
- Throw in drained and rinsed red kidney beans. Let it all simmer on low heat for 20 minutes. Stir occasionally.
- While it cooks, chop spring onions, slice red chilies, and get lime wedges ready. Serve hot in a cosy soup bowl or put it over the rice. Top it with sour cream, shredded cheddar, spring onions, red chilies, and a squeeze of lime, sprinkle with fresh herbs like parsley or cilantro. Grab a spoon and dig in! Chipotle chilli flakes - this was my recent discovery in Tesco grocery store. It is unbelievable spice and real game changer. Try it for yourself!
