- Start cooking your pasta. Place it into the boiling salted water and cook according to the instructions on the packet, approx 10min.
- Prepare all the vegetables – wash, peel and grate or chop. Prepare the leftover lamb – shred or cut into bitesize pieces
- Heat olive oil in the large pan, add minced garlic and fry for 1-2 minutes, stirring. Add other vegetables – carrot, onion and celery. Sauté for 5 minutes
- Add the plum tomatoes and crush it with the spoon. Add the leftover lamb, stock, salt, pepper and dried herbs. Stir all very well, increase the heat and let it boil for couple of minutes
- Reduce the heat and simmer for 10 minutes. stirring occasionally.
- Drain cooked pasta, but reserve some cooking water. Toss pasta to the pan and cover it with rich lamb sauce. Add some pasta water to make the sauce look glossy and silky
- Serve with grated parmesan on top. Enjoy!
