- Wash tomatoes. Then choose one of the techniques: 1) using a toothpick poke each tomato 3-4 times OR 2) using a sharp knife make cross-shaped cuts on each tomato bottom, but without slicing it completely. Put these tomatoes into large container.
- Peel and chop or mince garlic cloves. The more garlic you use, the more intense flavour would be. Chop parsley.
- Add garlic and parsley to the container with tomatoes. Pour in olive oil, vinegar and add salt. Cover with lid and give it a good shake. (Literally, dance with container for a bit, mixing and combining tomatoes, garlic and parsley together, while covering all in oil and vinegar. Place in the fridge for at least 3 hours, but better keep it overnight.
- These tomatoes are excellent just out of the fridge on a hot day served as a side with grilled meat. But during cold winter days they are perfect along with hearty stew.
