- Heat oil in heavy-based pan or skillet with high side (and lid). Slice the sausages into rounds and add them to the hot pan. Fry for 2 minutes while stirring. This releases the fat from the kielbasa, which we’ll use for cooking our vegetables. The sausage rounds will also become nicely crispy.
- While the kielbasa is frying, prepare the garlic, onions, and carrots. Mince the garlic, peel and chop both onions and carrots.
- Add minced garlic to the pan and fry for 1 minute until fragrant. Toss in both brown and red onions, along with the carrots. Stir and fry for 2 minutes.
- While the onions and carrots are cooking, wash and remove the seeds from the pepper. Cut it into small pieces. Also, wash and pat dry the baby potatoes and cut them into halves or quarters.
- Add the potatoes, peppers, and a can of natural sweet corn to the pan. Season with salt, pepper, and your choice of herbs and spices. For this dish, parsley, coriander leaf, oregano, paprika, cumin, and chili powder work well.
