Ingredients

Instructions

  1. Heat oil in heavy-based pan or skillet with high side (and lid). Slice the sausages into rounds and add them to the hot pan. Fry for 2 minutes while stirring. This releases the fat from the kielbasa, which we'll use for cooking our vegetables. The sausage rounds will also become nicely crispy.
  2. While the kielbasa is frying, prepare the garlic, onions, and carrots. Mince the garlic, peel and chop both onions and carrots.
  3. Add minced garlic to the pan and fry for 1 minute until fragrant. Toss in both brown and red onions, along with the carrots. Stir and fry for 2 minutes.
  4. While the onions and carrots are cooking, wash and remove the seeds from the pepper. Cut it into small pieces. Also, wash and pat dry the baby potatoes and cut them into halves or quarters.
  5. Add the potatoes, peppers, and a can of natural sweet corn to the pan. Season with salt, pepper, and your choice of herbs and spices. For this dish, parsley, coriander leaf, oregano, paprika, cumin, and chili powder work well.
  6. Stir all the ingredients to ensure they're coated in the oil and fat from the sausage. Cover the pan with a lid and let it cook for about 20 minutes, or until the potatoes are soft.
  7. Taste for salt and spices, adjusting if necessary.
  8. Serve with a sunny-side-up egg, and sprinkle spring onions on top.
    Enjoy your meal!

Just Simple Recipes: Bites and Bits Essentials for Mexican-Inspired Stew with Kielbasa

What is kielbasa sausage and where to use it?

Kielbasa sausage, often simply called 'kielbasa', is a delicious staple in many kitchens. Originating from Poland, this sausage is known for its distinct flavour and versatility. Typically made from pork, beef, or a combination of both, it's seasoned with garlic and marjoram. Its smoky and garlicky notes make it stand out in any dish. Kielbasa can be found in most supermarkets, usually in the cold meat section.

Using kielbasa is straightforward. You can be grill, fry, boil or bake. Whether you're throwing it on the barbecue, adding slices to a stir-fry, or incorporating chunks into a hearty stew, its rich flavour enhances the meal. For a quick fix, just slice it up and pan-fry with some onions and bell peppers. And if you're feeling a tad more adventurous, you can even include it in pastas, soups, and casseroles. Give a try to easy breakfast option: fried kielbasa and sunny-side eggs, it would fill you up until late lunch.

Why to fry kielbasa first before other ingredients?

Frying kielbasa first is a culinary trick that serves a delightful purpose. As the kielbasa cooks, it releases its natural fats. These fats are packed with flavour from the meat and the spices within the sausage. By letting the kielbasa release its fat at the beginning, we create a rich base for the rest of the dish. When we add vegetables to the same pan, they get coated with this flavourful fat. This not only ensures that the veggies absorb the lovely essence of the kielbasa but also gives them a wonderful, slightly crispy texture. Think of it as the vegetables getting a kielbasa-infused makeover. It's a simple step that elevates the entire meal. Maybe it is not very healthy from that side of view, so be ready for long walks and activities to burn out the calories from this magnificent dish. Enjoy!
