Russian Green Cabbage Salad

Ingredients
- 1 medium green (white) cabbage
- 1 long English cucumber or 3-4 small cucumbers
- bunch of fresh parsley
- 3-4 spring onions (scallions)
- 4 tablespoons vegetable oil (rapeseed, sunflower)
- 2 tablespoons white (distilled) vinegar
- pinch of salt and ground pepper
Instructions
- Shred or finely slice the cabbage. Add the cabbage to a large bowl and sprinkle with salt. With clean hands, give the cabbage a strong squeeze to release the juices. Squeeze as strong as you can.
- Use a boxer grater for the cucumber. Chop the fresh parsley and spring onions finely. Add cucumber and herbs to the bowl with cabbage. Taste for salt.
- In a small bowl, combine vegetable oil, white vinegar, ground pepper, and salt if needed to adjust. Pour into the bowl.
- Mix everything well to coat the veggies in the dressing.
- Chill the salad in the fridge for 30 minutes to let the flavors meld.
