Stuffed Peppers with Minced Meat are a hearty and comforting dish that’s surprisingly simple to make. These turkey mince stuffed peppers are stewed in a rich, creamy sauce, making them wonderfully juicy and full of flavour.

Turkey mince is a healthier alternative to beef, with less fat and a high protein content, making this dish both nutritious and delicious. The combination of savoury turkey, fluffy rice, and velvety sour cream sauce creates a meal that feels indulgent yet light at the same time.
Why You Need to Make This Dish
This recipe is perfect for those who love delicious, fuss-free meals. Stuffed Peppers with Minced Meat are budget-friendly, easy to prepare, and incredibly satisfying. The combination of turkey mince and rice in a creamy tomato-based sauce makes for a well-balanced dish, providing both protein and carbohydrates. Every bite is packed with flavour, and when you dip the stuffed pepper into the sauce, it’s pure comfort food bliss.
One of the best things about this dish is how versatile it is:
- Stuffed Peppers with Minced Meat are great for meal prep—just make a batch and store it in the fridge for quick lunches or dinners throughout the week.
- Leftovers reheat beautifully, whether in the microwave or on the stove.
- It’s kid-friendly—I often keep a batch in the fridge, and my teen can help himself whenever he’s hungry. My younger one loves all things with sour cream, so it is easier for me to fill her with healthy stuff if it has sour cream and ingredient.
- Minimal hands-on time—the actual prep takes around 10 minutes, and then the stove does all the work.
Using rainbow-coloured bell peppers not only makes the dish look vibrant and inviting but also adds a subtle sweetness that pairs beautifully with the creamy sauce. This meal is both visually stunning and incredibly convenient to make!

Ingredients
The beauty of this recipe is in its simplicity. I am using just a few key ingredients, each bringing depth and richness to the dish.
- Turkey mince – Lean yet full of flavour, turkey is a great high-protein choice that absorbs spices beautifully.
- Long-grain rice – Helps bind the filling together and soaks up all the delicious juices as the peppers stew.
- Onion & garlic – These add a savoury base to the filling, making it rich and aromatic.
- Dried herbs (oregano, parsley, dill) – Enhance the filling with layers of flavour, bringing a hint of freshness.
- Salt & pepper – Essential seasonings to balance and bring out the dish’s natural flavours.
- Sweet bell peppers – Large enough to hold the filling, they soften as they cook, absorbing the creamy sauce.
- Sour cream – The base of the sauce, creating a smooth and velvety texture.
- Tomato paste & stock cube – Give the sauce a rich, slightly tangy depth while adding umami to the dish.
- Extra herbs (parsley, dill) – Stirred into the sauce to add a fresh, fragrant finish.

How to Make Stuffed Peppers with Minced Meat
To get the best texture, start by soaking the rice in hot water for 10 minutes. While that sits, mix the turkey mince with finely chopped onion, minced garlic, and a generous amount of dried herbs, salt, and pepper. Once the rice has softened slightly, drain and add it to the mince mixture.
Prepare the peppers by cutting off the tops and removing the seeds, keeping the tops as "lids" for presentation. Stuff each pepper generously with the turkey and rice filling. Arrange them in a large pot or deep oven dish.
Next, make the creamy tomato sauce by dissolving the stock cube in hot water, then stirring in the sour cream, tomato paste, salt, pepper, and herbs. Pour this rich sauce over the peppers, covering them almost entirely. Let the peppers simmer on medium-low heat for about 1.5 hours, allowing the sauce to thicken and the flavours to meld beautifully. If you prefer, you can also cook them in a slow cooker or bake them in the oven for a hands-off approach.

What to Serve with Turkey Mince Stuffed Peppers
Those Stuffed Peppers with Minced Meat is incredibly satisfying on its own, but you can elevate it even further by pairing it with some sides:
- Crusty bread or garlic bread – Perfect for soaking up the creamy tomato sauce.
- Mashed potatoes – A rich and buttery side that complements the tender peppers beautifully.
- A simple side salad – Something fresh, like a cucumber and cabbage salad, balances out the richness.
Whether served as a standalone meal or with a side, these stuffed peppers make for a wholesome and comforting dinner.

How to Store and Reheat
Stuffed Peppers with Minced Meat store exceptionally well, making them a great meal-prep option. Once cooled, place them in an airtight container and store them in the fridge for up to 4 days.
For longer storage, they freeze well too! Place them in a freezer-safe container, making sure the sauce covers them to prevent freezer burn. They’ll last up to 3 months in the freezer.
To reheat, simply microwave them for 2-3 minutes or warm them up in a saucepan over low heat, adding a splash of water or broth to loosen the sauce. If frozen, let them thaw overnight in the fridge before reheating.
