Easy Boiled Summer Carrots

Ingredients
- 500 gr carrots, peeled
- 2 tbsp olive oil
- 2 tbsp fresh chopped parsley
- 1 tbsp ground cumin
- 3 garlic cloves, peeled and minced
- 1 lime
- Pinch of salt and pepper
Instructions
- Cut carrots into 4-5 cm long and 1 cm wide sticks - cut the carrots in halves, then cut into “wedges”.
- Bring 1 ltr of water to boil in a saucepan over the high heat. Add carrots and salt, reduce the heat to medium and cook for 7 minutes.
- Meanwhile, prepare the oil mixture. Grate the lime zest and squeeze the lime juice - we need 1 tsp of lime zest and 1 tsp of lime juice. Peel and mince or finely grate the garlic. In a bowl combine olive oil, lime zest and juice, garlic, parsley, black pepper and cumin. Mix well all the ingredients.
- Remove the saucepan from the heat, drain the carrots and return to the saucepan. Stir in the olive mixture, making sure that all the carrots are covered. Serve with extra black pepper, parsley and salt if needed more.
