What you will need for this cherry meringue dessert:
- Cherries: I adore cherries and I really make the most of the cherry season! If you don’t love cherries as much as I do then you can use strawberries, raspberries, or a mix of summer fruits instead. You can go for fresh cherries but frozen are perfect for this recipe.
- Double cream: Using double cream in this recipe is crucial for achieving the firm consistency required.
- Cream cheese: This is my secret weapon for the most delectable dessert, so do not leave it out! Instead of using just whipped double cream, I always opt to include cream cheese as well. It gives a nice, tender, and delicious texture while offering stability that prevents it from being runny, making it easier to apply.
- Sugar: Sugar is essential in making a berry compote to balance the tartness of the berries and enhance their natural sweetness.
- Meringue nests: You can’t have a cherry meringue dessert without meringue, can you?
Top Tips for Easy 15 Minute Cherry Meringue Dessert
- Cheat with ready-made meringues: Of course, you could slave away and make them at home but why would you want to? Pop down to your local Tesco and grab a bag for less than six eggs will cost you! So simple and less cleaning up too.
- Berry versatility: Experiment with different berries like strawberries, raspberries, or a summer fruit mix. Frozen berries are convenient and budget-friendly, such as a bag of frozen dark cherries from Aldi costing only £1.99 and they are already pitted, saving time!
- Adjust sugar levels: Adjust the sugar levels in the berry compote to suit your taste. I prefer less sugar since the meringue nests are already sweet enough. Imagine the delightful balance of slightly tart berries, sweet meringue, and delicate cream bursting in your mouth—pure yum!
Make Ahead and Storage Instructions
You can prepare the berry compote and cream ahead of time, but assemble the dessert just before serving. Enjoy it immediately to prevent the meringue becoming too soggy and falling apart, although a messy Eton Mess can be a sure win too. The kids will love it!
