Ingredients
- 250 ml kefir
- 1 egg (warm, from counter. If getting from fridge - let it stay at room temperature, or cover it with warm water for some time)
- 220-240g flour
- 2 tablespoon sugar
- pinch of salt
- 0.5 teaspoon baking soda
- vegetable oil for frying
Instructions
- In a large bowl, beat 1 egg with sugar and a pinch of salt until the sugar and salt are melted.
- Heat 250 ml of kefir in the microwave. Pour the kefir into a cup and heat for 30 seconds. Stir and heat again twice. The kefir should be warm, and you should see the whey. Gradually add the warm kefir to the bowl with the beaten egg and mix well.
- Gradually add the flour to the liquid mixture, about 2 tablespoons at a time (using a large spoon), and whisk in one direction. This will create a thick, homogeneous batter. Note that the amount of flour may vary, so adjust based on the consistency of the batter.
- Now, sift the baking soda over the batter. Mix it thoroughly and quickly. You will see the bubbles to start appearing immediately—this is the kefir reacting with the soda, making the batter airy, porous, and light.
Let the batter rest for 10-15 minutes, allowing the flour to settle and the gas bubbles to distribute evenly. Do not mix the batter once again. - Heat 3-4 tablespoons of vegetable oil on a well-heated pan. Reduce the heat to medium. When frying the pancakes, gently scoop it with a spoon from the edge, do not mix the butter once again. Just scoop from a side and place it on the pan, using a teaspoon or wet finger to shape. Fry until the bottom is golden brown and bubbles appear on the surface.
- Flip the pancakes and fry the other side. Add oil as needed, ensuring each batch is thoroughly cooked.
Place the finished pancakes on a paper towel to absorb excess oil. - Serve these delicious, fluffy kefir pancakes hot with sour cream, honey, sweetened condensed milk, jam, and, of course, tea. These pancakes remain airy even as they cool. Enjoy your meal!
