Delicious Filling For Tartlets: Cheesy Chicken Salad
Today’s Chicken Salad – is ideal filling for savory tartlets. This appetiser would not only look great on a holiday dish, but is great for coffee snack on weekday. Chicken and mushrooms is a match made in Heaven, add here touch of fresh tomato and creamy mozzarella – and you would go for seconds and thirds!

Ingredients
- 300 gr cooked chicken (any parts would do), shredded
- 100 gr mushrooms
- 1 tablespoon butter
- 1 medium tomato
- 70 gr mozzarella cheese + leave some to sprinkle on top
- 1-2 tablespoons of mayo
- pinch of salt
- pinch of pepper
- 10 savory tartlets, medium size
Instructions
- Heat the skillet and melt 1 tablespoon of butter in it. Slice the mushrooms, cut in smaller pieces. Add mushrooms to the melted butter and quickly fry for 3-4 minutes, stirring occassionally, do not let them burn.
- Shred or cut cooked chicken. Can use leftover chicken or packed chicken meat from deli.
- Wash and cut the tomato in halves, remove all juices from it. Cut tomato into small pieces - the same size as mushrooms. Add to the bowl.
- In a large mixing bowl combine chicken, tomato, fried mushrooms, mozzarella cheese, pinch of pepper and mayo. Mix all ingredients and taste for salt. Add a pinch of salt to your likeness.
- Let is sit in the fridge for 10 minutes before serving. When ready to serve - fill the tartlets, sprinkle the remaining cheese on top, garnish with fresh herbs like parsley or dill.
Notes
This salad is incredible filling for savory tartlets. But you can also serve it on rye bread toast, or try it as dip for crisps or tortillas chips.
