Cottage Cheese Stuffed Tomatoes Recipe
Cottage Cheese Stuffed Tomatoes - are a delicious and beautiful appetizer that are filled with freshness and great taste. This appetizer is perfect for both a holiday table and a daily meal. And the great point - it can be made in a whip with minimum efforts!
Ingredients
- 4-5 tasty ripe tomatoes
- 1 pack (300 gr) cottage cheese
- 1 pack (200 gr) cream cheese
- 3-4 garlic cloves
- mix of fresh herbs: parsley, dill, cilantro. Leave some herbs for décor.
- pinch of salt, pinch of ground pepper
Instructions
- Wash tomatoes and cut in halves. Remove inside of tomatoes and pat dry with paper towel.
- In a large bowl combine cottage cheese, cream cheese, minced garlic, finely chopped fresh herbs, salt and pepper. Mix all ingredients well.
- Fill the tomatoes with creamy cottage cheese mixture. Cover with kitchen foil or cling film and let it rest in fridge for 30 minutes.
- Sprinkle some fresh herbs on top and serve.
Notes
You can use both full fat or low fat cottage cheese and cream cheese for the filling.
I am usually using Tesco's brand cottage cheese in a tube. It is affordable and budget-friendly. Cream cheese generally is also from Tesco, but any brand would suit - Lidl, Aldi, etc.
You can try different herbs and combinations. Like basil, tarragon, marjoram.
